Fix empty OpenAPI documentation

OpenAPI documentation seems to be empty.

Check setup and examples at https://github.com/springdoc/springdoc-openapi?tab=readme-ov-file Discussion question: should we publicly expose the OpenAPI (without API key). I guess it would make sense, as the API endpoints are public knowledge anyways, they are meant to be read and access by anyone as part of the documentation.
